Ingredients:
- 140 g cornmeal
- 140 g flour
- 4 tbsp baking powder
- salt and pepper
- 50 g grated parmesan
- 2 eggs
- 400 ml milk
- 50 g melted butter
- 8 scallions
Whisk the dry ingredients: flour, cornmeal, salt, pepper and one third of the parmesan.
Mix the milk, butter and the eggs. Combine together with the dry ingredients. Add the sliced scallions.
Poor the batter into the pan and sprinkle over the reserved parmesan.
Bake for about 30-35 min in a preheated oven at 190 degrees C.
