This recipe i found in “Backschule, Step by Step”
- 250 g carrots
- 6 eggs
- 160 g sugar
- 300 g ground almonds
- 50 g flour
Also, for decoration:
- powder sugar
- lemon juice
- flaked almonds
The grated carrots mix together with the egg yolks. Add the flour and the ground almonds.
Separately, whisk the egg whites with the sugar until stiff. Add to the carrot mixture.
Preheat the oven at 180 degrees C.
Let it bake around 55 min. Let it cool.
Prepare the glaze with the lemon juice and powder sugar and cover the cake. Also, the cake can be decorated around with almond flakes.
If you have marzipan, you can try to mold some little carrots 🙂
