This recipe I got from a work colleague ( actually from her mom 🙂
- 1100 g sugar
- 1300 g grated quinces
- 2 cinnamon sticks
- 600 ml water
- 2 lemons
Grate the quinces and sprinkle the juice of the lemons over them.
Prepare the syrup. Heat the water, sugar and the cinnamon sticks together, until the sugar is dissolved and it starts boiling ( be careful, the hot drops of the syrup may sprinkle).
Add the quince into the syrup and cook on a high heat until it starts boiling. Then turn to medium heat.
Stir the mixture all the time, to avoid burning your marmalade 🙂
Test a little of the marmalade on a plate to check if is ready. If a skin forms on top quickly and it is not watery, it is ready to set.
Pour the marmalade into sterilized jars, and lid.
