1. a vanilla pod
  2. 250 g butter
  3. 100 g powdered sugar
  4. 2 egg yolks
  5. 300 g flour
  6. 50 g cornstarch
  7. salt
  8. powder sugar for dusting
  9. 225 g of jam ( I used Quince Marmalade 🙂

Use a small, sharp knife to slice the vanilla pod in half length-ways. Use the tip of the knife to scrape out the vanilla seeds.

Mix the butter (at room temperature), powder sugar, vanilla and a pinch of salt. Add one by one the egg yolks.

Separately mix the dry ingredients: flour and cornstarch.

Combine together the butter mixture and the dry ingredients.

Refrigerate the dough until firm (at least for one hour).

On a floured surface roll out the dough.  Using a cookie cutter (the form is up to you) cut out the dough. Use a smaller cookie cutter to cut out the centers.

On the full cookie spread about a half of teaspoon of jam.

Place the cut-out cookie on top.

Bake in a preheated oven at 180 degrees C until the cookies are golden brown.

Dust the tops with powdered sugar.
