- 3 eggs
- 100 g brown sugar
- 20 g sugar powder
- 1-3 tsp instant coffee or espresso powder
- 75 g flour
- 30 g chopped walnuts
- 175 g heavy cream
- 40 g sugar powder
Beat the egg whites with the 20 g of powder sugar until it forms soft peaks.
Separately, mix together the egg yolks, brown sugar and the instant coffee.
Add the flour into the egg yolks mixture. Then, slowly incorporate the egg whites.
And finally the walnuts 🙂
The batter should be baked in the preheated oven ( at 200 degrees C) for about 12-15 minutes.
Place a clean kitchen towel over the cake. Wrap the cake in the towel and let it cool.
For the filling, just whip all the ingredients together until stiff peaks form.
Fill in the roulade. 🙂
