- 7 tbs oil
- 280 g flour
- 3 tbs backing powder
- salt and black pepper
- 2 eggs
- 250 buttermilk or yogurt
- 75 g corn flour
- paprika powder
- gouda cheese (optionally)
Mix the dry ingredients: the flour, backing powder, salt and pepper.
Separately, beat the eggs with the buttermilk and the oil.
Incorporate in the mixture the dry ingredients. Add the corn flour and some grated cheese.
Place the batter in the muffins form.
Sprinkle on top some paprika powder and add slices of chorizo.
Bake the muffins in the preheated oven ( at 200 degrees C) about 20 minutes.
Better to be served warm. 🙂
